Green Onion Scallion Pancakes

Ingredients:

3 cups all-purpose flour
1 cup boiling water
⅓ Cup cold water
6 tbsp. salted butter, softened
6 tbsp. chopped green onion
Table salt
Oil for frying

Directions:


  1. Place flour in a large bowl, add boiling water and mix with a wooden spatula, let it cool for a few minutes and add the cold water. Knead for 5 minutes until smooth.
  2. Cover with plastic wrap let it rise for 1 hour.
  3. Transfer dough to a floured surface, divide into 6 pieces and roll out dough. Spread butter one side of the dough and sprinkle salt and green onion.
  4. Roll each roll tightly (like a taquito) and take the end of the roll and twist it (like a lollipop). Cover for 15 minutes.
  5. On a floured surface pat the dough flat (swirl side up) and roll out to ¼ inch thick.
  6. Heat pan and add 6 tablespoons of oil on a medium-low heat and cook until golden brown on both sides.
  7. Cut into wedges and serve.
